How To Make Stuffed Pepper Soup
Ingredients:
1 lb Ground Beef or Ground Turkey
1 TBsp Olive Oil
1 Cup Chopped Onion
2 TBsp Minced Garlic
1 TBsp Garlic Powder
1 Red Bell Pepper, cut into ½ inch strips
1 Green Bell Pepper, cut into ½ inch strips
1 Yellow Bell Pepper, cut into ½ inch strips
1 Can (15 oz) Tomato Sauce
1 Can (14.5 oz) Diced Tomatoes
3 Cups Beef Broth
2 Tbsp Italian Seasoning
Salt and Pepper
2 Cups Cooked White or Brown Rice
¼ Cup Chopped Parsley, for garnish
Shredded Cheese, for garnish
Directions:
1. In a large pot, or Dutch Oven, heat olive oil over medium-high heat. Add the ground meat and cook until browned, breaking up into smaller pieces with a spatula. Season meat with salt and pepper. Drain excess fat.
2. Add the chopped onions and minced garlic to the pot with the beef, stirring occasionally until the onions are translucent.
3. Stir in the chopped red, green, and yellow bell peppers and cook for a few more minutes until the peppers start to soften.
4. Add the diced tomatoes, tomato sauce, and beef broth to the pot, stirring to combine. Season with Italian seasoning, garlic powder, and a little salt, and pepper.
5. Bring the soup to a simmer, then reduce the heat to low and let it cook for about 20-30 minutes to allow the flavors to meld together.
6. Stir in the cooked rice and let the soup simmer for an additional 10-15 minutes.
7. Taste and adjust seasoning as needed.
8. Serve the Stuffed Pepper Soup hot, garnished with shredded cheese and fresh parsley if desired.
