Delicious Slow Cooker Mongolian Beef

This Slow Cooker Mongolian Beef is absolutely delicious, and so easy to prepare.  It’s a great meal for busy weeknights.

Those that know me well know that  I am a huge fan of slow cooked meals. I really do love my slow cooker and it comes in handy on days when I’m really busy, or simply not in the mood to stand over a stove. 

As a wife and mom, I love preparing delicious meals that I know my family will love, but I don’t always enjoy the time it takes to prepare some of those meals.  

With this Slow Cooker Mongolian Beef, It takes just a few minutes to assemble the ingredients together, and add them to the crock pot.  I can then put my feet up, and let the slow cooker do all the work for me.

And not only is this meal super easy to prepare, but it is soooooo good! The beef is covered in a delicious, tangy, flavorful sauce that is not too spicy, but just right. This crock pot recipe actually tastes just like a meal you would get from an Asian restaurant!

This crockpot Mongolian Beef pairs well with steamed rice. I usually serve it with rice or lo mein noodles.  You could pair it with your favorite vegetables as well.

What Type Of Beef Is Used In Mongolian Beef?

Most recipes, including my recipe, call for flank steak.  I’ve also heard of people using sirloin steak in their recipes.

How To Prepare Slow Cooker Mongolian Beef

This recipe is so simple to make.  It only requires a few minutes of work (most of which you can do ahead of time), and a few simple ingredients that you probably already have on hand. 

If you’re looking to switch up your slow cooker routine with something deliciously different,  give this Slow Cooker Mongolian Beef a try. It’s so easy to make and it’s sure to please everyone in your family!

Ingredients:

1½  lbs  Flank Steak, sliced thinly against the grain

3 Garlic Cloves, minced

1 Tsp Ginger, minced

½ Cup Green Onions

½ Cup Reduced Sodium Soy Sauce

⅓  Cup Brown Sugar

¼ Cup Cornstarch, plus 2 Tbsp Cornstarch

½  Cup Water

2 Tbsp Vegetable Oil

1 Tbsp Sesame Oil

1 Tbsp Sesame Seeds

1 Tbsp Onion Powder

½ Tsp Red Pepper Flakes

½ Tsp Black Pepper

Pinch of Salt

*You can substitute Sriracha sauce or cayenne pepper for the red pepper flakes.  Add as much to suit your taste buds.

Directions:

1. Cut your flank steak into thin slices, making sure you slice against the grain. Then dice into smaller pieces. Place the steak into a bowl.

2. Season flank steak with salt, pepper and onion powder, and coat with cornstarch. Stir until combined, then set aside. Discard any leftover cornstarch. 

3. Mince both the ginger and garlic and set aside.

4. At the bottom of your slow cooker add the vegetable oil and then the steak.

5. In a bowl, mix the garlic, ginger, brown sugar, sesame oil, soy sauce and water until well combined.  Gently pour over the steak. 

6. Cover and cook steak on High for 2-3 hours or on Low for 4-5 hours.

7. About 20 minutes before serving, whisk together 2 tablespoons of cornstarch with 2 tablespoons of cold water. Add this mixture to the slow cooker and stir. Cook for an additional 20 minutes or until the sauce thickens to your liking.

8. Garnish the Mongolian Beef with scallions and sesame seeds.
