8 oz Spaghetti Noodles
1 lb Center Pork
2 Cups Water
1 Red Bell Pepper
1 Lb Baby Bok Choy
2 Small Carrots
1 Large Yellow Onion
4 Cloves of Garlic
3 Tbsp Dark Soy Sauce
2 Tbsp Light Soy Sauce
1 Tbsp Hoisin Sauce
1 Tbsp Sesame Oil
1 Tbsp Mirin
1 Tbsp Powdered Ginger
1 Tsp Salt
1 Tbsp Black Pepper
Oil of your choice (vegetable oil, canola oil)
1 Green Onion chopped, optional
Sesame Seeds, optional
Directions:
Step One
1. Prepare the pork by rinsing thoroughly, and gently patting it dry.
2. Marinate pork and set aside. (see below for instructions on how to marinate pork.)
Step Two
1. Thoroughly wash all of your produce.
2. Slice the onion into thin strips, to ensure that they cook evenly. Separate the leaves of the baby Bok choy and slice the white stalks diagonally. Cut the carrots into thin pieces and julienne the red bell pepper. Mince the garlic. Set all of the veggies aside.
Step Three
1. Turn the Sauté setting on your Instant Pot to HIGH. Add 1 tbsp of the oil of your choice and allow the oil to heat.
2. Add the pork to the Instant Pot and sauté until golden brown on the outside. Remove the meat from the pot and set aside.
3. Add the minced garlic to the Instant Pot, saute until golden brown for about 45 seconds.
4. Add the water to the instant pot and deglaze the bottom by scraping it clean with a wooden spoon or spatula.
5. Break your spaghetti noodles in half and place them into the bottom of the Instant Pot in a crisscross pattern. This will help to prevent them from sticking. Do not stir the noodles after placing them into the pot. Gently submerge noodles into the liquid.
6.Close the Instant Pot lid, seal the valve, and pressure cook on high for 4 minutes.
7. After 4 minutes have passed, immediately release the natural pressure release valve, and let it rest for an additional 4 minutes.
8. After 4 minutes, open your Instant Pot and gently stir the noodles. Add the remaining dark soy sauce, light soy sauce, hoisin sauce, and mirin to the noodles. Stir until ingredients are thoroughly combined.
9. Turn the Instant Pot saute’ setting on HIGH, and add the sliced bok choy, red bell pepper, onions, carrots, and pork to the pot.
10. Allow the vegetables to cook for about 6 to 8 minutes, stirring often. This process allows the vegetables to become tender yet retain a slight crunch, while the pork develops a beautifully caramelized exterior. Adjust the sauté time based on your preference for the crispness of the vegetables.
If you prefer your vegetables to be on the softer side, extend the sautéing time by about 2 or 3 minutes. If you enjoy a little crispness, reduce the sautéing time slightly by 2 to 3 minutes.
